So, we trying something different, at least to us, and that is a Keto Pizza. Thank you to our Daughter in Law Stephanie for serving this to us while we had a chance to see the kids and grandkids. I was so surprised at the taste of this pizza that we just had to make it ourselves. What is being done is replacing the breading or crust with more protein so there are no carbs in this pizza. Now there are lots of recipes out there and you can add all different items to the crust, but we are using the easiest recipe.
Now for those who do not know what Keto is, let me give you a little background on this new diet. The ketogenic diet is a high-fat, adequate-protein, low-carbohydrate diet that in medicine is used primarily to treat difficult-to-control (refractory) epilepsy in children. The diet forces the body to burn fats rather than carbohydrates. Normally, the carbohydrates contained in food are converted into glucose, which is then transported around the body and is particularly important in fueling brain-function. 1 can of Chicken
½ cup Mozzarella Shredded
¾ cup of Parmesan Grated
Seasonings of your choice
Preheat oven to 400 degrees
In large bowl mix can chicken, cheese and seasonings
Line baking sheet with parchment paper and press chicken mixture into even thin layer and bake for 20 minutes
Remove from oven and top with desired toppings
Bake for an additional 10-15 minutes until cheese is melted and brown.
Again there are different ways of doing this like grinding raw chicken thighs or breast (first baking time would differ) or adding spinach to the mix, so use your imagination and just have fun with it.
